I have recently been revisiting some of the screenshot tools after my preferred tool broke during a Firefox update - that'll teach me to use a FireFox plug-in.
I found this really nice one called Shutter that has all the options I need (and then some), including editing the screenshots to insert arrows, annotations or tooltips etc.
I've been using it on and off for the last couple of weeks so I could send some template layouts to a client and it has proven really intuitive to use. It was also extremely useful to be able to do screenshots of cascading menu's, which had always been a bit hit and miss for me before.
Shutter has a single button on it's GUI specifically for this purpose - it uses a built in timer to take the shot, so you have time to move your mouse into the correct 'hover' position (delay duration is configurable).

It is in the Mint repo, so it should also be in Ubuntu's repo if you want to go that route.
Sorry, I should have mentioned that in the OP.

No worries. I found it easy to install from the PPA. (Google is my friend... Laughing )

Just to update this topic, the Firefox plug-in seems to work OK now but I prefer to just open Shutter when I need it and have it minimised at the bottom.
